Google Resolves Review Count Bug: Most Profiles Restored, Some Fixes Pending

If your review count does not return to the level it was before this issue in the next few days, please contact support.”

When talking about his issues, Google confirmed that businesses do not need to worry since their reviews are intact, but the review counts being shown need to be adjusted. The bug did not delete any reviews; it simply caused a lower-than-actual review count to be displayed.
